Sicilian Oranges salad with salted anchovies, green olives, unsalted capers and dill.



INGREDIENTS (SERVES FOUR):

4 Sicilian Oranges
4 Agostino Recca Salted Anchovies
100g Agostino Recca Green Olives
40g Agostino Recca Unsalted Capers
Dill
Extra Virgin Olive Oil
Pine nuts
Hot Pepper

PREPARATION:
Clean the salted anchovies and cut into small pieces. Peel the oranges, peel off the skin and slice; arrange on a dish and sprinkle with anchovies and olives.
In a separate bowl pour the oil, add pine nuts, capers, hot pepper and dill and mix everything gently beating with a fork. As soon as the sauce is ready, pour over salad and let it stay around 5-10 minutes before serving.



SUGGESTED WINE:
White wine - Catarratto di Sicilia IGP 12% Vol.
Serve chilled at 8-10°C.
